今朝、森清範貫主のインタビューが載っており、やはり発表の３時間前の午前１１時に漢検の理事長と共に開封するそうです。大きな和紙に書くため練習はできず、そこから２時間ひたすらイメージトレーニングをされるそうです。生放送で中継もされるのでそのプレッシャーは計り知れないことでしょう。

ちなみに森清範貫主もご自分で予想されており「翔」ではないかと仰っていました。大谷翔平選手の「翔」ですかと聞かれると違います。阪神の森下翔太の「翔」ですとのこと。大の阪神ファンだそうでお茶目な方でいらっしゃいました。

At 2:00 p.m. today, the “Kanji of the Year” was announced for the 30th time this year. This year’s Kanji was “gold,” perhaps influenced by the Olympics and the backdoor money issue. The kanji that received the most votes was chosen as this year’s “Kanji of the Year” and was written in ink on a 1.5-meter-long, 1.3-meter-wide sheet of Japanese paper by Seinan Mori, the abbot of Kiyomizu-dera Temple in Kyoto. It will be presented to the public in the main hall of the temple, and then dedicated to the principal image of the temple, Senju Kannon (Goddess of Mercy).

I usually don’t have time to make predictions because I only find out about it after it is announced, but this year I noticed it in advance, so I tried to make my own prediction. However, perhaps it is the decline of my memory, or perhaps the events of this year do not come to mind at all, and I am driven by anxiety, wondering what I have been doing all year. The only thing that came to mind after trying hard to squeeze it out of my mind was “the wall. As you can imagine, I seem to have only the most recent memories.

Last year, today, Staff T wrote a very interesting story about the behind-the-scenes of “This year’s Kanji” and I was so surprised to hear it, but I can hardly remember the content… All I remember is that “the Kanji of the year was announced on the day of the ceremony, and Seinan Mori wrote the characters on the spot. I will read it again.

This morning, I found an interview with Seihan Mori, who also said that three hours before the announcement, at 11:00 a.m., the chairman of the Kanji Association of Japan will open the book together with the chairman of the Kanji Association when he arrives. Since he writes on a large sheet of Japanese paper, he cannot practice, so he will spend the next two hours training his image. The pressure must be immeasurable since the ceremony will be broadcast live.

Incidentally, Seinori Mori, the chief abbot of the temple, also made his own prediction and said it would be “Sho”. He is asked if it is the “Sho” of Shohei Otani, but it is not. He said it is “Sho” for Shota Morishita of the Hanshin baseball team. He is a big Hanshin fan and is very mischievous.

先日から、飾っている松の盆栽が目を引きます。

実家の松を選定していた亡き父を思い出すのですが、興味などさらさらなかったものですが、どうやって剪定していたのか…もう少しちゃんと聞いておけばよかったな。と、今さら思ったりしておりました。

さてさて、本日のつぶやきはそんな「松」のつぶやきなのです。

先日お蕎麦屋さんで定食を注文したのですが、例の如くランク付けが「松竹梅」（しょうちくばい）でありました。先日も「松」じゃなくて「竹」を注文。これを「極端回避」（極端な選択による損失の可能性を避けようとして真ん中を選んでしまう心理）というらしいのですが、私のような人はけっこう多いらしいようです。ちなみに「竹」の定食美味しかったですよ。

こんなふうに松竹梅は飲食店のメニューなどに多く使われますが、「特上・上・並」を「松・竹・梅」とすることで、お客さんが気兼ねなく注文できるようにという意図があるようです。また、うなぎ屋で「待つ(待つ)だけ(竹)うめえ(梅)」なんて洒落ているという語たとも言えるようです。

そんな松竹梅の由来は、松は常緑樹で冬でも緑の葉を保つことから「長寿・延年」、竹は折れにくい植物で「成長・生命力」のシンボル、梅は苔が生えるくらいの樹齢になっても春になると美しい花を咲かせることから「長寿・気高さ」の象徴とされ、松も竹も梅もめでたい言葉として使われる言葉。平安時代から縁起物として用いられているようなのですが、三つの等級に分ける際に通常は「松」が最上級になったのはなぜでしょうか。

諸説あるのですが、一つは「語呂がいいから」という説。

確かに「梅竹松（ばいちくしょう）」「竹梅松（ちくばいしょう）」ではしっくりきませんが、これは慣れということもあるでしょうか。また、「松は仙人が食べるという言い伝えがあるから最高級になった」「お目出度いものとして定着した順番」など色々な説がありますが、どの説も、もともとは松竹梅に序列はなかったという点では一致しています。また、縁起物として扱われるようになった歴史の古さ順で、松が平安時代、竹が室町時代、梅が江戸時代からといわれているからなど諸説様々であります。

それにしても懐が寒くても、お寿司屋さんでは「並」とは注文しにくいし、そうした消費者の心理に配慮して松竹梅が等級に割り当てられたとも言えるのですが、いやはや「並」の代わりに使われた梅にとっては迷惑な話のような気もしますが、そんな「松竹梅」のランク付けは庶民の自分にとってはありがたい限りです。

「松竹梅」みんなめでたくてみんないい呼び名ではありますが、ほんとうは「松で！」と、大きな声で注文してみたいのは正直なところであります笑。

名古屋では知らない人がいない喫茶店「珈琲所 コメダ珈琲店」。東京都内でも50店舗を超えているようなので、「見たことある」「たまに行く」という方も多いのでは。名古屋のローカル喫茶店だったコメダはいつのまにか全国制覇（？）を達成するまでになったのかと感慨深いものがあります。

コメダの特徴は、なんといってもモーニングですね。ドリンクいずれかを注文すると、ローブパンまたは山食パン（トースト）のどちらか1つ無料でついてきます。しかもパンのトッピングには「バター または マーガリン」「いちごジャム」「ぬる豆乳」のひとつがチョイスすることができ、パンの他には定番の「ゆで卵」「たまごペースト」「小倉あん」もひとつついてきます。

名古屋出身者はコーヒー1杯で無料の朝食を食べられるこのモーニングというメニューが当たり前だと思って成人するのですが、他県に引っ越して初めて、それが名古屋以外では当たり前ではないことに気づきます。

そのコメダに、甘味処があるのはご存知ですか？そのお店「おかげ庵」はコメダ珈琲店が運営する和風甘味喫茶の業態。ほぼ愛知県にしか店舗がないレアなお店。名古屋人であるスタッフＴ、先日初めて訪れました。

店内はコメダと同じくログハウス調の造り。見た目的に異なるのはソファーの色が赤ではなく緑になっているということぐらいでしょうか？メニューはコメダとは違っていて、甘味やドリンク、食事メニューまで和風のもので統一されています。しかし一部コメダでおなじみのメニューのアレンジ版もあったりして、コメダによく行く人も楽しめるようになっているんですよ。

「おかげ庵」に行ったらぜひオーダーしたいメニューが、『だんご三昧』。(私は甘いものが苦手なので、お醤油のお団子を注文しましたが…)
真っ白なお団子と醤油、きなこ、あんこがついてくるのですが、これを実は、テーブルで自分で焼いて楽しむことが出来るんです。

専用の焼き台にお団子をのせて、しっかり焼き目がついてくるまで待ち裏面にひっくり返します。両面が焼けたらまずお醤油に浸します。浸した醤油団子はまた焼き台にのせて2度焼きしたら完成です！

焼き網にくっつかないコツは、しばらく表面をあぶってから網の上にのせることだそうですよ。

きなことあんこは焼けた団子を蜜に浸したのち、きなこ／あんこをつけて食べればOK！どれもホクホクで香ばしいです。焼き物は他にも五平餅や大福、いそべ焼もあるのでお好みに合わせて楽しめますよ。

コメダでおなじみの「あのメニュー」の和風アレンジ版もあります。あつあつでサクサクのデニッシュパンの上にたっぷりのソフトクリームがのっている『シロノワール』の和風のアレンジ版『抹茶シロノワール』。抹茶ソフトの上に黒蜜をたっぷりかけていただきます。今、季節限定で東京バナナとコラボのシロノワールもありました。

もちろんモーニングもありますよ。ドリンクを頼むだけでおにぎりとお味噌汁が付くセットもあるんです。

大人もワクワクできるこのお団子セット、自分で焼けてアツアツの焼き立てが食べられるのは良いのですが、焼くのに集中して会話が無くなってしまうので要注意です。

Coffee shop Komeda Coffee Shop is a well-known coffee shop in Nagoya. There are more than 50 stores in Tokyo, so there are probably many people who have seen or occasionally visit the store. I wonder how Komeda, which was once a local coffee shop in Nagoya, has somehow managed to conquer (?) the entire country. It is impressive to think that Komeda, once a local coffee shop in Nagoya, has now conquered (?) the whole country.

The most distinctive feature of Komeda is its morning service. When you order a drink, you get either loaf bread or toasted mountain bread for free. In addition, you can choose one of the following toppings for your bread: butter or margarine, strawberry jam, or wet soy milk.

People from Nagoya come of age thinking that this morning menu, which includes a cup of coffee and a free breakfast, is the norm, but it is not until they move to another prefecture that they realize that it is not the norm outside of Nagoya.

Did you know that Komeda has a sweet shop? The store “Okage-an” is a Japanese-style sweet cafe operated by Komeda Coffee Shop. It is a rare store that is almost exclusively located in Aichi Prefecture. Staff T, a Nagoya native, visited there for the first time the other day.

The interior of the store is built in the same log house style as Komeda. The only difference in appearance is that the sofas are green instead of red. The menu is different from that of Komeda, and is unified with Japanese-style items, from sweet and beverage items to the food menu. However, there are also some arranged versions of familiar Komeda menu items, which can be enjoyed by those who often visit Komeda.

One menu item that you should definitely order when you visit “Okage-an” is “Dango Sanmai. (I ordered the soy sauce dango because I don’t like sweets…)
It comes with pure white dango, soy sauce, soybean flour, and red bean paste, but you can actually bake your own dango at the table.

Place the dumpling on the special grill and wait until it is well browned, then flip it over to the other side. When both sides are done, dip the dumplings in soy sauce. The soaked dumplings are placed on the grill again and baked twice before completion!

The trick to keep the dumplings from sticking to the grill is to grill the surface for a while before placing them on the grill.

For kinako (soybean flour) and anko (sweet red bean paste), dip the grilled dumplings in the honey and then dip them in the kinako/anko before eating! You can also enjoy other baked items such as Gohei-mochi, Daifuku, and Isobeyaki, depending on your preference.

There is also a Japanese version of “that menu” that is well-known at Komeda. The “Matcha Shironoir” is a Japanese version of the “Shironoir,” a hot, crispy Danish bread topped with a generous amount of soft-serve ice cream. The matcha soft serve is topped with a generous dollop of molasses. Right now, there is also a seasonal Shironoir in collaboration with Tokyo Banana.

Of course, morning breakfast is also available. There is a set that includes an onigiri (rice ball) and miso soup just for ordering a drink.

Even adults can get excited about baking their own dumplings, and while it’s great that you can bake them yourself and eat them fresh from the oven, be careful not to lose the conversation as you concentrate on baking.

本日は二十四節気の大雪（たいせつ）にあたります。ようやく季節が暦に追いついてきた感じですね。

大雪（たいせつ）とは特に日本海側で北風が強く吹き、雪が激しく降り始める頃とされています。暦どおり、本日は北日本や北陸、関東北部も雪の予報となっているようですのでお出かけの際はくれぐれもご注意ください。

冷えた体を温めるべく(?)スタッフH、最近は夕食時に日本各地の日本酒を楽しんでおります。小さな瓶で売られているものも多く有難いです。

先日発表がありましたが、ユネスコ＝国連教育科学文化機関の政府間委員会は、日本酒、焼酎、泡盛などの「伝統的酒造り」を全会一致で無形文化遺産に登録することを決めたとのことです。

日本酒などは国内での消費は減少傾向にあるそうですが、海外では日本食ブームの影響もあり人気が高まっているそうです。

日本の伝統的酒造りは、「米や麦を蒸す」「麹をつくる」「もろみを発酵させる」など各地の風土に合わせて発展きましした。また儀式や祭礼行事などでも必要不可欠な存在として継承されてきました。

日本酒には普段食べている米とは違い、日本酒造りを目的とする米「酒造好適米（しゅぞうこうてきまい）」が使用され、一般的には「酒米」と呼ばれます。美味しい日本酒を作るために品種改良をされ、麹菌が活動しやすい構造をもっているといわれています。

酒米は古来より生産され、奈良時代には米と米告示を原料とする酒造りは始まっていました。

江戸時代の終わりころには現在の兵庫県の地域が名を馳せ、有名な「山田錦」が生まれまれたそうです。

国家主導のもとに品種改良の取り組みが始まったのは明治時代に入ってからだそうです。今では１００種類もの酒米が農林水産省に登録されているとのこと。

その後太平洋戦争によるコメ不足により食用米が主となり酒米は消滅の危機に瀕します。わずかに残った種もみを元に数年におよぶ育種を繰り返し現在では安定的に収穫できるようになった酒米もあるそうです。

また酒米は食用米よりも育てるのが難しく、寒暖差や土壌による影響を受けやすいといわれています。稲穂も食用の米よりも背丈が高く、台風や強風で倒れやすいのだそうです。そのため育成には高い技術が必要となります。

先人たちの苦労に思いを馳せ、今夜も美味しくいただきたいと思います。

Today marks the 24th day of the year, Taisetsu (heavy snow). It seems like the season has finally caught up with the calendar.

Taisetsu is when northerly winds blow strongly and snow begins to fall heavily, especially on the Sea of Japan side. As per the calendar, snow is forecast for northern Japan, Hokuriku, and northern Kanto today, so please be careful when you go out.

To warm up your cold body(?) Staff H has recently been enjoying sake from various regions of Japan at dinner. We are thankful that many of them are sold in small bottles.

It was announced the other day that the UNESCO (United Nations Educational, Scientific and Cultural Organization) Intergovernmental Committee unanimously decided to register “traditional sake brewing” such as sake, shochu and awamori as an intangible cultural heritage.

Sake and other alcoholic beverages are said to be on the decline in consumption in Japan, but are gaining popularity overseas, partly due to the Japanese food boom.

Traditional sake brewing in Japan has developed in accordance with the climate of each region, including “steaming rice and barley,” “making koji,” and “fermenting moromi. Sake has also been passed down through generations as an essential part of ceremonies and festivals.

Unlike the rice we normally eat, sake is made from rice that is suitable for sake brewing and is generally referred to as “sake rice. The rice has been bred to produce delicious sake and is said to have a structure that facilitates the activity of koji mold.

Sake rice has been produced since ancient times, and sake brewing using rice and rice koji as raw materials began in the Nara period (710-794).

By the end of the Edo period (1603-1867), the region of present-day Hyogo Prefecture had become famous, and the famous “Yamada-Nishiki” was born.

It was not until the Meiji period (1868-1912) that the government began to take the initiative in breeding sake. Today, as many as 100 varieties of sake rice are registered with the Ministry of Agriculture, Forestry and Fisheries.

Later, due to the shortage of rice caused by the Pacific War, the sake rice was in danger of disappearing as edible rice became the main rice variety. After several years of repeated breeding based on the few remaining seeds, some sake rice can now be harvested stably.

Sake rice is also said to be more difficult to grow than food rice, and is more susceptible to cold temperatures and soil conditions. Ears of rice are also taller than edible rice, and tend to fall over in typhoons and strong winds. Therefore, growing rice requires a high level of technology.

Thinking of the hard work of our forefathers, I would like to enjoy another delicious meal tonight.
