今週の名古屋はずっと３０℃超え、干からびてしまいそうなお天気です。

 

こんなに暑いと、知らずに爽やかなもの、涼しそうな場所、さっぱりとした食べ物を求めてしまいます。

 

当店の爽やかなものといえば、こちらの白磁皿。

 

 

中国の白磁皿で、直径１５ｃｍ強、高さ２ｃｍの神秘的な白さを持つ器です。

白磁が中国で作られるようになったのは北斎時代（５６０～５７０年）、青磁の製造技術の完成に伴い発展していきました。

唐時代になると白磁の生産が本格化。

当時は「南青北白」といわれ、南部には青磁、北部には白磁を焼く窯が多かったようです。国民の生活が豊かになり、文化・芸術が最も発達した北宋時代には中国全土に陶磁窯が築かれ、白磁の名品が多く出回るようになったそう。

 

 

実は白磁のもとは青磁で、簡単に説明すると青磁の素地と釉薬の中から鉄分を除いて焼かれたものが白磁なのです。

鉄分が少なく、ケイ酸とアルミニウムを主成分とする白素地に、鉄分のない植物灰とカオリナイトから精製した無色の釉薬をかけ、高火度で焼成するのが基本的な製造方法と言われています。窯内の温度は青磁と同様１３００度近くで、還元焼成（窯内の酸素を制限し焼成物から酸素を奪う焼き方）が用いられます。

 

こうして透明度のある上品な白さが美しい白磁の器が出来上がります。

 

またもう一点爽やかな白い器があります。

 

 

こちらは古伊万里の小皿です。

透明感のある優しい乳白色、直径約９．５ｃｍ、高さ約２．５ｃｍ。

洗練されたシンプルさが魅力的なこちらの小皿には和洋折衷どんなお料理も馴染みそうです。

A Chinese white porcelain dish with a mysterious whiteness of over 15 cm in diameter and 2 cm in height. White porcelain began to be made in China during the Hokusai era (560-570), and developed with the completion of celadon manufacturing technology. In the Tang dynasty, white porcelain production began in earnest.

 

At that time, it was called “South Blue North White”, and it seems that there were many kilns that burn celadon in the south and white porcelain in the north. During the Northern Song era, when people’s lives became richer and culture and art were most developed, ceramic kilns were built all over China, and many white porcelain masterpieces became available.

 

In fact, the source of white porcelain is celadon, and to put it simply, white porcelain is made by removing iron from the base of celadon and glaze. It is said that the basic manufacturing method is to sprinkle a colorless glaze purified from iron-free plant ash and kaolinite on a white base that has a low iron content and is mainly composed of silicic acid and aluminum, and bake it at high heat. I am. The temperature inside the kiln is close to 1300 degrees, similar to celadon, and reduction firing (a method of firing that limits oxygen in the kiln and removes oxygen from the fired product) is used.

 

In this way, a white porcelain vessel with beautiful transparent and elegant white is completed. There is another refreshing white bowl.

 

This is a small plate of Koimari. A transparent and gentle milky white color with a diameter of about 9.5 cm and a height of about 2.5 cm. This small plate, which is attractive for its sophisticated simplicity, seems to be familiar with any dish that is a mixture of Japanese and Western styles.
